  • 1/4 cup honey
  • 2 tbsp brown sugar
  • 2 tbsp canned pumpkin
  • 1/4 cup canola or coconut oil
  • 2 1/2 cups rolled oats
  • 1/2 cup coconut flakes
  • 1/3 cup banana chips
  • 1/4 cup sesame seeds
  • 1/4 cup pecans, chopped
  • 1/4 cup cashews, chopped
  • 1/4 cup dried cranberries

1. Preheat oven to 300F.

2. In a small saucepan heat honey, sugar, pumpkin, and oil over a medium heat until sugar has dissolved (3-5 minutes).

3. In a large bowl, combine the rest of the dry ingredients. Pour warm honey mixture over dry ingredients and mix well. Spread even on a baking tray/s so granola is in a thin layer.

4. Bake for 25-30 minutes, stirring every 10 minutes to ensure even browning. When granola is a golden brown remove from the oven and let cool. Break up and store in an air-tight container.
